To make jaggery roti you need

  • Cup Jaggery powder or grated jaggery
  • Half a cup of water
  • 1.25 cups whole wheat flour
  • 1 teaspoon fennel
  • One tablespoon ghee
  • 2 tbsp dry coconut – optional
  • As needed Ghee, for frying

So let’s knead the dough first

  • Take cup of jaggery powder and cup of water in a bowl. You can also use grated jaggery instead of jaggery powder.
  • Mix well and keep aside for 30 to 45 minutes or till all the jaggery dissolves.
  • In another pan take 1 to 1.25 cups wheat flour. Also add 1 teaspoon fennel (Saunf) and 1 tablespoon ghee.
  • First stir the jaggery solution and then with the help of a sieve, sieve it directly into the floured bowl.
  • Mix it very well first.
  • Then start kneading and make a smooth dough.
  • The dough will become a little sticky due to the presence of jaggery in it. If the dough seems wet, you can add a little more wheat flour.

Now make good bread

  • Now take a zip lock bag. You can also take a small sized banana leaf.
  • Spread some ghee on the zip lock bag.
  • Take a medium sized ball from the dough and place it on a zip lock bag.
  • With the help of a rolling pin, roll out small roti’s in the shape of a poori.
  • Just enough that the roti should be slightly thicker than the stuffed paratha.

To cook jaggery roti

  • Now take out the roti from the zip lock bag and keep it on the hot pan.
  • Keep the flame low or medium and start roasting the jaggery roti.
  • When one side turns light brown, flip it.
  • Apply some ghee on top. These jaggery rotis absorb ghee. So use less ghee.
  • When the other side turns brown, turn the roti.
  • Apply a little ghee on this side as well.
  • Cook the roti by pressing it well.
  • Remove the roti from the pan when it turns golden brown. Your jaggery roti is ready!
